In the autumn of 1918, the Girl Scouts established what was called the influenza diet kitchen at Central High School, today’s Cardozo, and set about preparing broth, custards, blancmange, gelatin and soup.

The diet kitchen’s meals were delivered to homes.

The facility has ten clinical rooms, a blood processing facility and a diet kitchen for nutrition studies.

“Mercy on us, Heavy!” expostulated Helen, “just because you work in a diet kitchen, don’t think that the only thing people want when they are sick is something to eat.”

These are some of the things I have done since I joined up with that diet kitchen outfit.
